Apple Muffins

It's apple season around here.  The orchards are packed on weekends, the trees are full of beautiful, red apples, and cider is on the stand for sale.  Apples are my favorite and after searching many different recipes, I came up with this easy muffin recipe that's perfect with a cup of coffee or tea.

Ingredients:
2 cups of sugar
2 eggs
1 cup of applesauce*
1 Tbsp of vanilla

3 cups of flour
1 tsp of baking soda
1 tsp of salt
1-2 tsp of cinnamon - you decide

4 medium apples peeled, cored, and diced
brown sugar for sprinkling on top

1.  Preheat the oven to 350 degrees.
2.  Line muffin tins with 16 paper liners.
3.  With a mixer, combine sugar, eggs, applesauce, and vanilla. 
4.  In a separate bowl, combine flour, baking soda, salt, and cinnamon.  
5.  Add the flour mixture to the sugar/egg mixture in thirds, mixing each addition well.  
6.  Add the diced apples and mix well by hand.
It will be quite lumpy!
7.  Fill each paper liner with the batter.
I filled mine almost to the top.
8.  Sprinkle the top with brown sugar.
9.  Bake at 350 degrees for 25 minutes and be prepared for your house to smell AMAZING!
Go ahead, take a bite.  I didn't wait for the muffins to cool because they smelled so delicious.  I can tell you, they did not disappoint! 

You may have noticed the * by the applesauce in the list of ingredients.  That's because I no longer use any oils in my baking.  After quite a bit of research, I decided not to use them, but that's a post for another day.  If you would like my easy applesauce recipe, click HERE to find it.  After trying this recipe, you won't ever go back to store-bought applesauce.  

There is one thing I would change about this recipe, and will the next time I make it.  Instead of sprinkling brown sugar on top, I will mix the brown sugar with some cinnamon and then sprinkle it.  I make an apple cake that way and thought of it after I put them in the oven.
